
The dressing I use for my version of Cafe Rio dressing calls for Butter Milk. So, I was thinking what can I use this left over Butter Milk for?? And then a thought came... Buttermilk pancakes! Kirsten posted about how good they were. So, after the Dr. appt today I made em!
No need to waste it!

3 cups flour
3 tbl. sugar
3 tsp. baking powder
1 1/2 tsp baking soda
3/4 salt
3 cups Butter Milk
1/2 cup milk
3 eggs
1/3 cup melted butter
Mix and make

The recipe should be cut in half because I had a lot. So, I used Wax paper and put pancakes in between it and bagged em up for the freezer.

2-3 per bag

Then I tossed them in a bigger bag. And into the freezer they went.

Do u want a PERFECT pancake? Wait for the bubbles! When u see lots of bubbles flip it!

Bubbles= Perfect pancakes and use a little oil vs butter!

Fast but very Yummy Pumpkin Pie.
2 small frozen pie crust
2 cups can pumpkin
1 14oz. Can Condensed sweetend milk
2 eggs
1 1/2 tsp. cinnamon
1/2 tsp. Ginger or pumpkin pie
1/2 tsp. Nutmeg
1/2 tsp. salt
Mix

Pour into shells and Bake 15 minutes on 425. Then after 15 minutes lower heat to 350 and bake for 35 minutes.

Perfect every time. All my children Love these!
